Oobli is a California food-technology company developing intensely sweet proteins as alternatives to sugar and high-intensity sweeteners. The business traces its roots to Miraculex and later operated as Joywell Foods before adopting the Oobli name in 2022. It was founded by Dr. Jason Ryder, who serves as chief technology officer, and is led with chief executive Ali Wing. Oobli uses precision fermentation to produce proteins that occur naturally in equatorial fruits and berries without harvesting those scarce plants at commercial scale.
Its portfolio includes brazzein variants associated with the oubli fruit, monellin from serendipity berry, and thaumatin associated with katemfe fruit. These proteins can deliver sugar-like sweetness at very low inclusion levels and may replace a substantial portion of sugar in formulations. Oobli has sold branded dark and milk chocolate products sweetened with its proteins and is developing business-to-business ingredients for beverages, dairy, sports nutrition, baked goods, and other categories.
Oobli has multiple U.S. regulatory milestones, but they are not FDA product approvals. FDA issued “no questions” letters for GRAS notices covering brazzein-53 in 2024, monellin in 2024, and brazzein-54 in 2025 under specified intended uses. FEMA expert panels have separately affirmed specified sweet proteins as GRAS flavor ingredients. Commercial chocolates demonstrate market entry; broader beverage and ingredient partnerships announced through 2026 represent commercialization work, not proof that sweet proteins have already displaced sugar at mass-market scale.
Oobli’s impact model links nutrition and land use. Because sweet proteins are hundreds to thousands of times sweeter than sugar by mass, small ingredient quantities can reduce added sugar while preserving a sugar-like taste profile. Fermentation avoids relying on rare tropical fruits and could use far less agricultural land than growing and refining equivalent sweetness from sugarcane or sugar beets.
Health and environmental outcomes depend on formulation and production. A lower-sugar product is not automatically nutritious, and sweet proteins remain proteins that require allergen and safety evaluation for intended uses. Fermentation needs feedstock, water, energy, and downstream purification; Oobli has not published an independently reviewed commercial lifecycle assessment. Consumer acceptance, price, regulatory scope, stability during processing, and the amount of sugar actually replaced will determine real impact.
FDA “no questions” letters document GRAS-notice outcomes for three Oobli sweet-protein preparations: brazzein-53 and monellin in 2024 and brazzein-54 in 2025. These conclusions apply to specified intended uses and are neither premarket approvals nor findings that every Oobli finished product is FDA approved.
Oobli’s branded chocolates were commercially sold before September 2026, making them achieved product launches rather than prototypes. The company says sweet proteins can replace up to 90% of sugar in some applications. That percentage is a formulation capability claim, not evidence that Oobli products have reduced population sugar intake by 90%.
Oobli estimates that a 1% reduction in global sugar production could spare more than 500,000 acres of land. This is a scenario projection and cannot be attributed as achieved company impact. Public sources do not disclose current annual ingredient tonnage, unit sales, cumulative sugar displaced, independently measured metabolic outcomes, or verified avoided greenhouse-gas emissions.
